Italian Herb Roasted Lamb
Great Tasting Roasted Lamb
1 cup Zesty Italian Dressing
1/2 cup dry red wine
3 cloves garlic, minced
1 Tbls. dried rosemary leaves
2 tsp. dried thyme leaves
1 tsp. salt
1 tsp. pepper
1 Butterflied Leg of Lamb (about 3 lbs.)

 

Mix the dressing, wine, garlic, herbs and seasonings together.

Pour over the lamb placed in a large zipper-style plastic bag. Seal the bag.

Marinate in the refrigerator for at least 2 hours, preferably overnight, turning occasionally.

Place on a rack in a roasting pan.

Bake at 350 degrees F. for 50-60 minutes or until a meat thermometer reaches 160 degrees F. Let stand 10 minutes before slicing.

Garnish with fresh Rosemary.

Tip:
Look for lamb that is pinkish red and has a velvety texture. Dark red meat usually indicates that the meat is older.
