LAMB BRAIN FRY
DEEP FRIED LAMB BRAIN
Lamb brain is soft and easily digestible. It contains high volumes of phosphorus, vitamin B-12, and vitamin-C and does not contain sugar. Thus it is good for health. But it is also rich in harmful substances like cholesterol and saturated fats. So excessive use should be avoided. Brain is also known as head cheese.


Lamb Brains : 2 Nos
Red Chilly Powder : 1 Table Spoon
Ginger-garlic Paste : 1 Table Spoon
Onion Paste : 1 Table Spoon
Turmeric Powder : 1 Tea Spoon
Corn Flour : 2 Table Spoons
Rice Flour : 2 Table Spoons
Egg White : Of one Egg
Salt : As Required
Refined Oil : 300 ml


 

1. Cut each brain into 4-5 pieces and wash well.

2. Except oil, add all the other ingredients together and prepare some what a thick batter adding little water, if necessary.

3. Transfer the brain pieces into the batter and allow to settle for fifteen minutes.

4. To a deep bottomed frying pan, add refined oil and heat. Slowly add the brain pieces, one by one, with adequate amount of batter into the boiling oil and deep fry on medium flame until they turn dark brown. Remove the fried brain pieces from oil and spread on tissue paper so that excessive oil will be removed,

5. Add the green chillies and curry leaves to the oil in the pan and deep fry slightly.

6. Top the fried brain pieces with fried green chillies and curry leaves.

Crispy Brain Fry Is Ready.
Serve Hot Along With Vegetable Salad And Raw Onion Slices.
