Canned Sweet Green Tomatoes End-of-Garden |

Wash and cut up about four pounds of green tomatoes into bite-size pieces. Place in non-metallic container and cover with a brine of 1 cup salt and 3 quarts water. Cover and let stand for 2 days. Discard the brine and rinse tomatoes thoroughly with cold water. Set out six sterilized pint jars. Break 3 cinnamon sticks in half, placing half a stick in each jar. Add 1/2 tsp. celery seed and 1/2 tsp. whole cloves to each jar. In a large sauce pan make a syrup of 2 cups water, 4 cups vinegar and 6 cups sugar. Bring syrup to a boil, stirring often. Fill jars with hot syrup and install the lids. Process for 10 minutes. Ready to eat in 4-5 days.
