Coconut Milk - Fat Free
Forget the Fat, Get the Flavour!
1 Tbls. cornflour (cornstarch)
500 mls. skim milk
2 tsp. good quality coconut essence

 

Mix the milk and cornflour in a saucepan. Bring to a simmer and cook for a few minutes until thickened. Allow to cool.

Add coconut essence and stir.

Refrigerate and use as coconut milk or cream in Asian recipes.
