Lemon Butter
Delicious for Pie or Cake Fillings!
180 gms (6 oz.) chopped butter
2 cups castor sugar
3/4 cup lemon juice (use fresh lemons, not preserved juice)
1 tsp. grated lemon rind
4 eggs, beaten and strained

 

Combine all ingredients in top half of double saucepan or in a HEATPROOF bowl. Stir CONSTANTLY over simmering water until mixture thickly coats the back of a wooden spoon. Pour into hot, sterilized jars.

Seal when cool.

Variation:
Replace 1/3 cup lemon juice with lime juice and use lime rind.

Preparation Time: 30 minutes Serves: approximately 3 cups
