Baked Ziti with Sausage
Pasta casserole
Marinara sauce (homemade or store bought)
6 sausage links 3 hot and 3 sweet
1 box of ziti, ziti regati, or other macaroni
8 oz. mozzarella
grated cheese (handful)
flat leaf parsley (handful, minced)


 

Take sausage out of skins and saute breaking up with a fork and cook on low until no longer pink.

Set aside.

Cook macaroni. Drain.

Get out a large flat rectangle oven proof baking pan.

Spread some sauce on the bottom of the pan...water it down a little.

Put half the cooked macaroni in the pan. sprinkle half the sausage over it with half of the minced parsley and half of the handful of grated cheese and half the grated mozzarella.

Spread sauce over this.

Repeat the same as above ending with sauce on top.

Bake in oven 350 degrees 1 hour.


MARINARA SAUCE

1 large can crushed tomatoes
1 can of Italian style tomato paste
l can of tomato sauce (8 oz)

1 onion chopped fine
2 or 3 garlic cloves minced
handful of Italian flat leaf parsley minced
1/2 teas. oregano
1/2 teas. basil
1/2 grated carrot
pinch sugar
1/4 cup olive oil
1/2 teas. salt
1/2 teas. pepper

Saute parsley, garlic, onion, carrot, oregano and basil on low until soft.

Add the can of tomato paste and 1 can of water from the paste can.

Stir.

Add the small can of tomato sauce and the large can of crushed tomatoes.

Stir.

Add the pinch of sugar,salt and pepper.

Cook on low for about 1 1/2 hours, stirring frequently. Add water if necessary as sauce should not be too thick.
