Easy Homemade Manicotti
Manicotti with Ricotta
Manicotti:
6 eggs
l-l/2 cups flour
l-l/2 cups milk
l/2 tsp. salt

Filling:
3 lbs. Ricotta
3 egg yolks
small handful grated Italian cheese
l/2 tsp. salt
pepper - dash
2 Tbls. chopped fresh parsley
l/2 lb. mozzarella cheese (grated)

 

Mix all ingredients for Manicotti.

Use a small teflon frying pan and fry like pancakes - l/3 cup of mixture for each pancake.

They cook in seconds. I cook them one at a time and transfer each pancake to waxed paper lined cookie sheets.

When all mixture is done and you are finished cooking, you may store these on the cookie sheets (covered) in the refrigerator a few days.

Filling:
Mix filling ingredients. Place filling mixture down center of each manicotti and lap over each end. Will look like a cannoli.

Spread your homemade (or favorite) tomato sauce on bottom of baking dish.

Arrange manicotti side by side. DO NOT STACK.

Ladle gravy on top and bake in a 350 degree oven for about l hour.

Note:
I have found it is easier to make the homemade pancakes, rather than try to stuff the store bought ones. Makes approx. 24 pancakes

These are light and absolutely delicious! A wonderful meal with a mixed salad and baked chicken! Mangia!
