Easy Black Beans and Rice

1 cup uncooked white rice 1 15oz. can black beans 1 15oz. can stewed tomatoes
|
Cook the rice according to the directions on the package, except use 1/4 cup less water. Five minutes before the rice is done, stir in the can of undrained black beans and a can of undrained stewed tomatoes. Raise heat to medium, cook rice uncovered for 10 more minutes, stirring every now and then.
