Pasta with Sausage and Tomato Sauce

2 packages Italian sausage (try using one spicy and one sweet) - should be about 12-16 sausages 2 boxes pasta (around 14oz each) I used penne pasta, but any tubular pasta will work well. 1 lg jar sun-dried tomatoes in olive oil or sun-dried tomato paste 8oz Port wine (or Merlot and 2 shots good brandy) 1 jar good quality pasta sauce-do NOT use vodka sauce 1 lg. can beef broth fresh parsley your favorite grated cheese

Cook and drain pasta.
Pot #1: -remove casing from sausages, crumble pieces a little and sautee until browned, but not fully cooked. Pot #2: be sure there is room to add contents of pot #1 later -slightly reduce wine (should take at least 5 minutes) -pour in beef broth, and let it come to a simmer -lightly rinse sun-dried tomatoes. If using paste, skip this step. Add the whole can/jar to sauce pot -stir gently for 5 minutes, then add tomato sauce -let simmer for 5-10 minutes -drain grease from sausage chunks and add meat to sauce pot -let simmer until sauce thickens (approx 5-10 minutes at least) Toss with pasta in a large bowl, top with parsley and cheese, and serve!
