Pastina with peas and eggs Hit all five food groups in one sitting! |
|
|
1/2 cup of Pastina 2 eggs 1/4-1/2 cup of peas (however many you prefer) 1 tablespoon of butter 4 tablespoons of grated Parmesan cheese 1/2 teaspoon salt
|
1. Bring 6 cups of water to a boil. Before it reaches boiling point, add the salt to the water.
2. Add the Pastina to the water.
3. After about 7-8 minutes of letting the Pastina boil, throw in the peas.
4. Once the entire mixture starts to boil again, test to see whether the peas and Pastina is cooked to your liking by sampling a spoonful.
5. After it is done boiling, reduce heat to just above low and then drain the pot. Put the pot back on the burner and add the two eggs and the butter.
6. Stir until the eggs start to congeal.
Serves about two people, one if you're really hungry. It is a heavier dish, but it fills you up no matter how hungry you are. Plus you can hit all five food groups in this meal:
Pastina - Grain Eggs - Poultry Butter and Cheese - Dairy Peas - Vegetable
As for fruit, choose your drink accordingly. I prefer a thinner fruit drink like apple juice to go with the thicker contents of the meal.
Enjoy!
