Quick Ham Pasta
Pasta with Fresh Tomatoes and Basil!
8 ripe tomatoes
350g (12oz) pasta shells
225g thickly sliced ham
10 basil leaves
2 Tbls. olive oil
1 Tbls. tomato puree
salt and pepper
25g butter
sprig of basil

 

Skin tomatoes by immersing them in a pan of boiling water.

Chop tomatoes, cut ham into strips and shred basil.

Cook pasta in a large pan of lightly salted boiling water for 10-12 minutes until tender.

Heat oil in a saucepan, add tomatoes and tomato puree and saute fo 4-5 minutes. Add seasoning.

Drain pasta, toss in butter and seasoning. Stir in ham and basil.

Serve pasta topped with tomato sauce and garnished with a basil sprig!
