Rosies Roast Veg -N - Noodle Surprise Roasted Vegetables with Noodles and Parmesian |

1 portion medium dried noodles Vegetables of choice 1 Chicken stock cube Parmesian cheese 1 plastic bag 1 Tbls. olive oil

Vegetables of choice. Keep portions small and same size as tomatoes, for example, 3 or 4 cherry tomatoes - butternut squash - half a small onion - couple of broccoli florettes - piece of red pepper - 4 or 5 button mushrooms - pieces of courgettes.
Put the olive oil in bag and add the prepared vegetables. Mix the oil and vegetables together coating well. Place the vegetables on a dry oven dish and roast in oven for 10 minutes maximum at 150 electric or moderate gas. Turn the vegetables, if nessessary.
Put some water in a saucepan, add the stock cube and bring to the boil, then add the noodles and simmer for 3 to 4 minutes. Strain the noodles saving some of the stock.
Serve noodles and some stock into a pretty dish or bowl and put roasted vegetables on top. Grate some Parmesian over meal.
