Spaghetti with Turkey Sausage

1 lb. spaghetti 1/4 cup light olive oil 1 lb. bulk turkey sausage 3 cloves garlic, minced 1 pkg. frozen spinach 1/4 cup grated parmesan cheese salt and pepper, to taste

While bringing the water for the spaghetti to a boil, place the frozen spinach in a microwave-safe dish and microwave until thawed. When spinach is thawed, drain well in colander.
Pre-heat large non-stick skillet to medium-high.
Cook spaghetti according to directions on package.
While spaghetti is cooking, brown turkey sausage in half of the olive oil.
Add minced garlic and saute until golden.
Carefully add spinach to the skillet and heat through.
Combine spaghetti with mixture in skillet, and stir in the remaining half of the olive oil and then the parmesan cheese. Heat through, gently toss, and serve.
Goes great with some crusty bread spread with roasted garlic, a salad, and a glass of wine.
Notes: Grated zucchini also goes well in place of the spinach in this dish, just make sure to saute zucchini after adding the garlic. You could also do the same thing with thinly sliced broccoli. You get the idea.
I personally love garlic, but you may reduce or increase the amount to your taste. All recipes are just guidelines. If you find there is not enough olive oil, add some more. Sometimes a touch of butter is also nice. Tweak recipes to make them special to you!
