Tijuana Rice Dish
Authentic Mexican Dish!
1 tsp. salt
1 clove garlic, minced
3 Tbls. cooking oil
1 rounded cup uncooked rice
2 cups chicken broth
1/2 cup tomato puree or canned tomato
1/2 cup bell pepper, chopped
1/2 cup onion, chopped

 

Heat oil, add rice and cook until golden in color.

Saute onion, bell pepper and garlic and add to rice. Place salt, tomato and broth in blender. Blend well.

Add to rice and cook until tender and liquid is absorbed, approximately 20 minutes over low heat.

Serve with tacos, chicken taquitos, tamales with Mexican Fried Beans or just a great side dish.
