Tuna Spaghetti Great Spanish Dish |

2 Tbls. Olive oil 1/2 large onion, finely chopped 2 cloves garlic, finely chopped 2 medium tomatoes, chopped 1/2 green bell pepper, chopped 1 cup tomato paste 1/2 cup white wine 1 - 7oz. can chunky tuna in water 1 1/2 tsp. dry basil 1 1/2 tsp. Italian spice (oregano, marjoram, rosemary, bay) 1 tsp. salt 2 tsp. brown sugar

This is a ridiculously simple but amazingly good recipe that is popular throughout Spain.
Heat the oil in a large skillet and add onion, garlic, and bell pepper. Sauté till soft and add tomato. Sauté another few minutes and add all the other ingredients. Reduce heat and simmer for 1/2 hour covered. Meanwhile, bring the pasta water to boil and cook pasta al dente. I use whole-wheat or spinach pasta, either regular spaghetti or linguini. You can use this sauce for lasagna also.
Note: For a more fishy flavor, add cooked shrimp during the last 5 minutes of cooking.
