Key Lime Pie

4 extra large egg yolks 1 14oz. can sweetened condensed milk 1/2 cup fresh squeezed key lime juice 2 tsp. grated lime peel, use green part of the skin
Crust- 16 graham crackers, crushed 3 Tbls. sugar 1 stick soft butter, (1/4 lb)

Mix the crushed grahm crackers, sugar and butter and press into a 9 inch pie plate. Bake in a preheated 350F oven for 10 minutes until lightly browned. Place on a rack to cool.
Using an electric mixer, beat the egg yolks until they are thick and turn light yellow being careful not to over mix. Turn speed to low and add the sweetened condensed milk and then the lime juice. Add the grated lime peel and mix (still on low speed) for a few more seconds.
Pour mixture into pie shell and bake at 350 degrees F. for 12- 15 minutes to set the yolks.
Fully cool before slicing and garnish with whipping cream.
