Rhubard Custard Pie
This is a Good One!
Pastry for 9-inch two-crust pie
3 Eggs
2 Cups Sugar
3 Tbls. milk
1/4 Cup flour
1/2 tsp. nutmeg
4 Cups diced rhubarb
1 Tbls. butter

 

Heat oven to 400 degrees F.

Prepare pastry.

Beat eggs slighty. Add remaining ingredients except butter and mix thoroughly. Pour into pastry-lined pie pan. Dot with butter.

Cover with lattice top crust.

Cover edge with 2 to 3 inch strip of aluminum foil to prevent excessive browning.

Remove foil last 15 minutes of baking. Bake 50 to 60 minutes or until nicely browned.
