Almond Pork Chops with Mango A delicious, fruity dish! |

4 pork chops salt, black pepper 2 tbs wheat flour 1 tsp curry 2 beaten eggs 150 g (good 5 oz) chopped almonds 2 mangoes 1 1/4 dl (good 1/2 cup) thick cream 4 - 6 tbs oil or 50 g (1 3/4 oz) butter or margarine 1 - 2 tbs mango chutney

Wipe the pork chops with a paper towel and flavor them with salt and pepper.
Mix flour and curry and coat the pork chops first with flour, then beaten egg, and last chopped almonds. Press gently so the coating sticks to the meat.
Peel the mangoes (sp) and cut them in wedges. Beat the cream half-thick and flavor it with some curry.
Heat the fat in a large frying pan and fry the pork chops on low heat about 4 minutes on each side. Take them up and put them on serving plates. Heat the mango wedges in the pan and add chutney. Flavor with salt and pepper to taste.
Divide the curry cream on top of the pork chops and put the mango wedges next to each chop.
Serve with boiled rice and green peas or a salad.
If you coat the pork chops well ahead of frying, the coating sets nicely.
You can also make your own chutney of finely chopped mango, onion, lemon juice, salt, garlic, and cayenne.
