Apricot-Glazed Pork

1 lb (500 g) pork tenderloin 2 tsp (10 mL) canola oil 1 pkg (500 g) Green Giant* VALLEY SELECTIONS* Frozen California Mix 3 tbsp (45 mL) apricot preserves 1 tbsp (15 mL) oyster sauce or hoisin sauce Hot cooked rice or noodles, if desired

•Remove fat from pork. Cut pork into 1/2-inch (1 cm) slices. •Heat oil in a large non-stick skillet over high heat. Add pork; stir-fry 4 to 5 minutes or until pork is no longer pink. Add frozen vegetables; stir-fry 2 to 4 minutes or until vegetables are heated through. •Stir in preserves and oyster sauce; cook and stir about 30 seconds. Serve over rice or noodles if desired.
