Bobs World Famous Pork Stew
Simply the BEST Pork Stew You Ever Had!
3 lb. Pork Butt Roast, deboned, cubed and trimmed of fat
2 cups All purpous Flour or Masa flower, seasoned
Cooking Oil
1 cup White Wine, optional
3-4 pkgs. mushroom or onion gravy mix
1 Sweet Yellow Onion, grated or diced finely
1/2 cup Fresh Italian Parsley, chopped
1 lb. carrots or parsnips, peeled and cut to bite-sized pieces
2 Tbls. dry Oregano
1 Bay Leaf
2 Tbls. fresh chopped Garlic
kosher salt, to taste
fresh ground pepper, to taste



 

Bring to a boil 4-5 cups salted water. Add the bone from your Roast. Add the garlic, oregano, Bay leaf, and wine.

Season the cubed pork and lightly coat in Seasoned flour. Fry in oil until lightly browned then add to boiling water.

Remove bone and reduce pot to a simmer.

Cook pork at a slow simmer for 45 minutes. Slowly wisk in the packages of gravy mix.

Add onions and carrots. Cook for 15-20 minutes, still at a simmer.

Season to taste and add parsley before serving.

This recipe can be as thick as you want depending on how much gravy mix you add.

Optional Ingredients:
Potatoes, Turnips, or Sweet Corn
