Citrus Pork Shoulder
a twist on an old BBQ favorite
1 8LB pork shoulder, bone in
1 packet McCormick Grill Mates® Baja Citrus Marinade
2/3 C dijon mustard
2 oz olive oil
sheet of aluminum foil

 

Preheat a grill to approximately 300* F.

Mix oil, mustard and Grill Mates® Baja Citrus Marinade together in a small bowl. Pour this over the fat cap of the shoulder and spread out to evenly distribute.

Place meat on sheet of foil, and place on grill. Close grill. Be sure to check temperature and regulate often. If grill becomes too hot, meat will dry out quickly. Though marinade will caramelize and slowly burn, this crust will flavor and protect the meat underneath.

Meat is done when bone easily slips out of the shoulder by hand. Once bone has been removed, remove meat from grill and wrap in foil. Let sit for about 20 minutes to settle the juices.

Serve in chunks or pulled into shreds.
