Gourmet Pork Tenderloins Tender Pork Medallions in Flavorful Sauce |

1 cup flour divided into 3/4 cup and 1/4 cup 2 1/2 tsp. salt divided into 1 1/2 tsp and 1 tsp. 1 tsp. paprika 2 lbs. pork tenderloin (cut into 12 patties) 1/3 cup butter (not margarine) 1/2 cup chopped green pepper 1/2 cup chopped onion 4 oz. can sliced mushrooms, drained 2 cups milk 3 Tbls. lemon juice 1/4 tsp. black pepper

Combine 3/4 cup flour, 1 1/2 tsp. salt and paprika. Mix well in shallow bowl.
Melt butter in large heavy skillet.
Dredge pork patties in flour mixture and place in skillet using moderate heat.
Brown pork to golden brown.
Arrange pork patties in shallow 2 qt. baking dish and set aside. Add onions, green pepper, and mushrooms to pan drippings in skillet, and cook on low heat until tender.
Add remaining 1/4 cup flour to skillet and mix well.
Stir in milk slowly over low to moderate heat stirring constantly until thickened. Stir in lemon juice, 1 tsp. salt and pepper.
Pour over meat, cover and bake at 350 degrees F. for 1 hour.
Serve over hot buttered noodles or rice.
