Italian Sausage and Peppers Sausage, Peppers, Onions |

10 links Italian sweet sausage 10 links Italian Hot sausage 3 large onions 4-5 large green bell peppers 2 Tbls. fresh chopped flat leaf parsley salt and pepper

Put the sausages in a pan and bake, uncovered for about 50 minutes at 400 degrees F. Turn over half way through cooking to brown both sides.
Meanwhile, core the peppers and slice them into strips, not too thin. About 1 inch strips.
Peel the onions and slice, not too thin.
Place the onions, peppers, parsley, and olive oil in a deep frying pan. Sprinkle with salt and pepper and put a little water in (about l/2 cup). Stir and cook until fairly soft, covered, for about half hour on low heat. Stir now and then. Take the sausage out of the oven and place the sausage on a platter and place the peppers and onions on the platter also.
Serve with Italian club rolls, or Italian bread heros.
Note: This recipe can be made and served in another manner by adding tomato sauce. After the sausage is done, remove it and slice into one inch pieces on an angle. Pour a small can of DelMonte sauce on bottom of baking pan and put the sausages and the peppers and onions in together. Sprinkle with oregano and another can of DelMonte sauce mixed with a little water. Make sure the sausage mixture is thoroughly covered in sauce. Open more if you have to. This will make a large pan of sausage and peppers and is great for a party.
Then just heat it up and serve. Enjoy!
