Lean Pork Chops with Apples
|

4 loin pork chops (trim fat) 1/2 cup apple cider 1-2 cloves garlic, minced 1/2 tsp. sage 2 unpared eating apples (cored and sliced) 5 Tbls. plain low-fat yogurt 1 tsp. dijon mustard lemon pepper to taste

Put the chops in a plastic bag with the apple cider, garlic, and sage. Place the bag in a large bowl to catch any drips, then refrigerate 1-4 hours. Spray a skillet with Pam cooking spray. Brown the chops on both sides, and add the marinade from the bag. Cover and simmer on low heat until the chops are just tender. Remove the cover and simmer until most liquid has evaporated. Add the apple slices, coating them with the liquid from the pan. Cook over low heat, just until heated through. Mix yogurt, mustard, and lemon pepper together. Top the chops with dollops of the yogurt mix and garnish with the apple slices! Enjoy!
