Lemon Garlic Chops Serves Two as a One Dish Dinner! |

6 fast fry or 4 butterfly-cut pork chops carrots, cut into bit size pieces red or new (white) potatoes, cut into bite size pieces 4 Tbls. lemon juice 1 clove garlic, thinly chopped 1/4 cup butter or margarine, melted 1/8 tsp. rosemary 1/2 tsp. dried parsley Pinch of dill

Place pork chops in 9x13 baking dish. Place garlic evenly on each chop. Arrange potatoes and carrots around and between pork chops. Sprinkle dill and rosemary evenly over chops. Add lemon juice to melted butter. Pour this over the chops and veggies. Sprinkle parsley freely over entire dish. Cover and bake at 350 degrees F. for one hour.
Note: If you like lemon flavor, splash each chop with additional lemon juice before you place the garlic on each chop. Also, if the chops are not lean reduce the amount of butter by one tablespoon.
