Pork Neck Bones Italian Style Grandmas Recipe from the old country. |

4-6 pounds of Pork Neck Bones with meat-(May be found at any Asian or Farmer's market.)
1 Large yellow Onion 1 Large of whole tomatoes 1 Small can of diced tomatoes 6 Medium potatoes - peeled 2 sprigs of fresh parsley - diced 1/2 Lb. Fresh Green Beans cut on 1 inch diagnal. 1 cup of cooking oil.

Thinly slice, (not dice) onions. Heat a skillet over medium high heat. Fill skillet 1/3 full with oil. Add Onions and fry until golden brown; stir occasionally and drain with slotted spoon to on paper towel. Set aside.
Wash neck bones and pat dry. Lightly salt and pepper both sides.
Peal and wash potatoes. Leave whole.
In a large Pot (I use Al-Clad cookware). Heat 3 Tablespoons of oil over medium heat.
Add Neck bones and brown on all sides. Next add whole potatoes over meat. Then add canned whole and diced tomatoes.
Top with fried onions and do not stir. DO pierce whole tomatoes with a fork or knife. Add diced parsley.
Cover and simmer for 40 minutes on Medium low heat.
Heat oven to 350F degrees. Place covered pot into oven and cook for 2 hours or until meat and potatoes are fork tender, again not mixing. Add Green Beans to top of mixture 20 minutes before end of cooking. Remove from oven and dice potatoes in pot with a knife.
Serve in Bowls with fresh crusty Italian break and salad.
