Pork Tenderloin Mounds
16 bacon strips 8 pork tenderloin patties 8 onion slices 8 tomato slices(I skip this) 8 fresh mushroom caps (have also used canned) 1 Tbls. butterseasoned salt garlic powder pepper
Criss-cross 2 uncooked bacon strips; place tenderloin patty on top and sprinkle with seasonings. Cover with onion, then tomato. Bring bacon strips together and overlap across top of patty. Place on a broiling pan so drippings can drain. Bake uncovered for 50-60 minutes at 350. Just before serving, saute mushroom caps in butter. Insert toothpick in each cap and stick in the center of each tenderloin.
