Sage Rub for Grilled Pork Tasty and simple pork rub for grilling. |

Dried rubbed sage, coarse sea salt, cracked black pepper, good olive oil, whole peeled garlic clove (optional)

Mix together:
4 parts dried rubbed sage 1 part coarse sea salt 1 part cracked black pepper
You may grind these in a mortar to homogenize if you prefer.
Rub pork, whatever cut you prefer, with the olive oil (does not have to be xtra-virgin as it may burn on the grill) and then the sage mixture.
Grill to desired doneness.
That's it. TOO EASY, and so very, very tasty.
Serve with grilled vegetables and polenta.
Experiment with the proportions and adjust to your taste. Try rubbing the pork first with a cut clove of fresh garlic.
