Spareribs with Vegetables Vietnamese Spareribs! |

3 lb. Spareribs (cut into 2-inch pieces) 1 large onion (cut into 10 pieces and separated) 2 med. red peppers (cored and cut into 2-inch by 1 inches) 1 bunch green onion (cut into 2-inch long pieces) 3 cloves garlic (minced) 2 tsp. sugar 3 tsp. Nuoc Mam (Vietnamese fish sauce) 1 Tbls. cooking oil

1. In a skillet or wok, bring 1 Tbls. cooking oil to hot. Add the spareribs and sauté over medium heat for 10-15 minutes or until cooked. Remove the spareribs to a plate and set aside.
2. Using the same wok, discard all but about 2 tsp. of oil. Add garlic , onions, red peppers, and green onion. Stir-fry for about 2 minutes or until the vegetables are slightly soft but still crunchy. Return the spareribs to wok, add fish sauce and sugar. Stir-fry on low heat for about 1 minute.
3. Transfer to plate and serve.
