Swedish Christmas Ham The Swedish answer to USA’s Christmas turkey. |

1 uncooked ham 1.5 – 4 kg.
Mustard covering: 4 Tbls. mustard 1 Tbls. sugar 1 egg yolk Dried breadcrumbs

Preheat the oven at 250 degrees F. Rinse off the ham in running water. Leave the net on. Put the ham with the rind up in a baking tin.
Stick a meat thermometer into the thickest part of the ham. Bake the ham in the lower part of the oven. Take it out when the thermometer shows 150 degrees F. The cooking time is about 45 minutes per pound.
Let the ham cool down, cut the net and take off the rind.
Mustard coating: Preheat oven at 400 degrees F.
Put the rinsed ham on an oven-proof dish.
Beat mustard, sugar and egg yolk. Brush the mix on the ham. Sprinkle some dried breadcrumbs on it.
Bake ham for about 15 minutes until coating gets golden.
For a crispier coating, pour a tablespoon of the ham liquid on the coating while baking.
