Thai Curried Pork
1 lb. thinly sliced pork
1 lb. assorted stir fry vegetables (Fresh is a plus)
1 Tbsp. green curry paste
2 Tbsp. soy sauce
2 Tbsp. mushroom soy sauce
1 Tbsp. vegetable oil
1 Tbsp. fish sauce (Opt.)
1 Tbsp. brown sugar
2 Tbsp. fresh basil
1 can Coconut Milk (Lite works great)
1 Tbsp. corn starch
4-5 cups cooked rice (Rice Cooker works AWESOME, Jasmine rice a definate Plus)

 

-Add Oil, Soy Sauce, and fish sauce to HOT Wok or large fry pan.
-Add Pork, Basil, and Curry then cook on high heat until pork is infused with color
-Add Stir Fry Vegetables and cook 2-3 minutes
-Add Coconut Milk and brown sugar, return to boil, reduce heat, simmer until vegetables are done about 5-7 min

***To Thicken Mixture Add Cornstarch to 3-4 Tbsp. of Stir Fry Liquid and mix well in seperate bowl. Add sparingly back to Wok until Mixture begins to thicken.
-Serve over a bed of rice!
