Cajun chicken, avocado and mango wraps Easy, delicious and healthy, with a kick |

*2 boneless, skinless chicken breasts *3 tbsp olive oil *1/4 tsp lemon juice *2 tsp cajun spice *1 avocado *1 tomato *1 mango *4 large whole wheat flour tortillas

1. Cut the chicken breasts into strips. 2. Mix the olive oil, lemon juice, and cajun spice in a small bowl. 3. Dip the chicken strips in the marinade mixture, coating them well. 4. Place the chicken in a heavy cast-iron skillet, uncovered. Cook on high heat until one side of the chicken is blackened slightly and the other side turns white (about 3-4 minutes). 5. Meanwhile, slice the avocado, mango and tomato, and set aside. 6. Flip the chicken with a spatula, lower the heat to medium, and cover the skillet to cook the chicken on the other side (about another 3-4 minutes, or until cooked through.) 7. Add the chicken, avocado, mango and tomato pieces to the flour tortillas, roll and secure with a toothpick. 8. Serve hot or cold.
Notes: -Blackening the chicken may cause your kitchen to become smoky. Turn on a fan and open the window to disperse the smoke, if possible. -If you can't find Cajun spice, you can replace with a mixture of salt, black pepper, cayenne pepper, paprika, cumin, thyme, and rosemary. Experiment to find the combination that suits your taste. -This recipe was inspired by the excellent sandwiches made by a local bakery in Montreal.
