Cheap Gourmet Chicken Au Ranch Whip up a gourmet meal cheap and fast |

4 boneless skinless chicken breasts 1 large yam or sweet potato, cut into fork-sized pieces 1 cup cut or baby carrots 1 cup sliced mushrooms 4 slices Swiss cheese 1 bottle Ranch style salad dressing 1 bottle favorite chicken spice mix 4 slices multigrain bread

Cook chicken breasts, yam, carrots, mushrooms and spices in 1 quart water on low (covered) for 30-45 minutes to taste. Prepare 4 bowls with a slice of bread at the bottom of each. Ladle the mixture from the hot water onto the bread (no broth). While still hot, top each breast with a slice of cheese, then pour the dressing over it liberally like a sauce. Optionally season with black pepper, paprika or hot chiles to taste. Don't forget to serve with wine, try the $10 per gallon Gallo Burgundy to really seem like a gourmet cook :).
