Chicken Stuffed with Mascarpone Tasty Chicken Dish |

2.5 lb. Boneless Chicken Breasts 2 Tbls. Chopped Rosemary 12 Tbls. Mascarpone Cheese Salt and Ground Pepper 6 Large Slices Parma Ham 4 Tbls. Olive Oil Juice of 2 Lemons

Preheat Oven on 230 degrees C. or 450 degrees F. or gas 8.
Mix chopped rosemary with mascarpone. Season with salt and pepper.
Stuff the mixture under the chicken skin.
Heat the oil in a frying pan, brown chicken on both sides until golden brown. Wrap each piece of chicken with the parma ham and place in a cooking dish.
Cook for 15 - 20 minutes.
Remove from the oven, add lemon juice with chicken juices to make a sauce.
Serve with vegetables and roast potatoes. Enjoy!
