Chicken Stuffing ala Fox Chicken and stuffing |
4 boneless chicken breasts (or thighs) 1 box of stove top stuffing 1 can of mushrooms 1 onion 1 green pepper 1 Tomato 1 can of jalepenos 2 celery stalks 1/2 can of pineapple 1 cooking apple 1 box of raisins (the little kid size box) 1 can cream of chicken soup
Take the veggies and cut them up how you like them. (I like them cut into big pieces). Butter a 11x17 pan and place the chicken in the pan. Stir the soup and the remainder of the ingredients together in a bowl and make sure it is a little watery (not too watery). Pour over chicken, making sure to cover the chicken slightly. Bake for about an hour uncovered in a oven at 425 degrees. Check chicken to see if it is done. It must not be pink. Salt and pepper to taste
*Note* Some of you may have seen this recipe on the back of a stove top stuffing box. Yes you are right but I have added items to suit me, and I have been making this for years. When I saw it I thought, that sounds good, but the way I do it is better, as you will see. If you don’t want it spicy, don’t add the jalepenos.
