Chicken and Broccoli with Mustard Sauce
A hearty winter warmer
3 x Chicken Breast
Medium head of Broccoli
1 x Small Onion
Chestnut Mushrooms
1 x Can of Condensed Chicken Soup
3 Tbsp Dijon/Whole Grain Mustard
Tbsp dried Dill
Mature Cheddar Cheese (Grated)

 

1. Chop chicken breasts into bite-sized chunks and fry gently in a little oil to seal.

2. Slice the onion and mushrooms and add to the chicken - stir untill soft and chicken is cooked through.

3. Cut the Broccoli into evenly sized florrets and steam for 12 minutes (or boil for 8).

4. Make up the condensed Chicken Soup in a pan/bowl wth some milk or water (your preference). Add the Mustard and Dill and stir well. At this point taste and add more Mustard if prefered and seaon with salt/pepper.

5. Now combine the sauce with the chicken and combine well. Cover with grated Cheese and Bake in oven for 10-12 minutes or untill cheese melts.

6. Serve with chips - Mm Mm Mmmmmm, this Rocks!!!
