Chicken with Pineapple and Ground Peanut
Pininyahang Manok (Chinese Style)
200g Chicken thighs, diced (2cm x 2cm)
4 Tbls. Peanut Chili Oil
4 Tbls. Soy Sauce
1/4 cup Ground Ginger
1/4 cup chopped scallions or red onions
1/2 can Pineapple chunks with syrup
1 Tbls. corn starch, dissolved in water
1/2 cup ground peanuts
1 cup bean sprouts
salt
pepper
2 Tbls. brown sugar
1 cup water
Sesame seeds

Peanut Chili Oil Ingredients
3 pieces Red Chilies
1/2 cup whole peanuts
1 Tbls. ground peppercorn
1 cup Vegetable Oil

 

For Peanut Chili Oil:
Pour vegetable oil in medium heat saucepan. Reduce red chilies for 5 minutes. Add the ground peppercorn and peanut while the chilies are being reduced for another 5 minutes. Set aside the oil until cool. Strain.

For the Recipe:
Pour peanut chili oil over high heat in a wok. Saute chicken, peanut and ground ginger for 3-5 minutes.

Then add the scallions and continue sauting for another 5 minutes.

Add soy sauce, pineapple syrup and cornstarch water. Let boil then simmer for 3-5 minutes.

Add water and reduce to 3/4.

Add sugar, pineapple chunks, and bean sprouts 3-5 minutes before the end of reduction. Attain consistency of the sauce.

Adjust the taste.

Season with salt and pepper.

Garnish and serve with sesame seeds and minced scallions.
