Chinese Lemon Chicken

1/2 lb of chicken breast (boneless, skinless) 1 tsp. salt pepper 1 lemon (cut into thin slices) 1 Tbls. vinegar 1 tsp. lemon juice 2 Tbls. sugar 1/4 tsp. salt 1/2 cup chicken broth 2 tsp. cornstarch

1. Cut chicken breast into bite size pieces. In a bowl, mix salt, pepper, vinegar, sugar, and chicken broth. Add chicken pieces to mix and marinate for 15 minutes.
2. In a wok, heat 1 Tbls. cooking oil until hot. Reduce heat to medium and add chicken and marinating sauce. Stir fry for 5 minutes or until cooked. Meanwhile, mix cornstarch with 1/3 cup of water.
3. Add lemon slices and cornstarch mix to chicken and mix slightly until sauce thicken. Remove chicken onto a plate and serve.
