Crispy Chicken Bites and Lemon Sauce

2 chicken breast fillets, 1 egg, beaten 1/4 tsp. white pepper 1/6 tsp. salt 1/2 tsp. crushed garlic 1/4 tsp. ground mustard powder 1/2 cup cornflakes, crushed
Sauce: 2 tsp. cornflour 1 tsp. sugar 2 Tbls. water 2 Tbls. lemon juice 1/4 cup orange juice

Preheat oven to moderate 180 degrees C.
Line oven tray with foil or baking paper.
Cut each chicken fillet into 5 strips diagonally.
Combine egg, pepper, garlic, mustard in a mixing bowl. Whisk until smooth.
Dip fillet strips in egg mixture. Coat with cornflakes crumbs.
Place chicken on a prepared tray. Bake 10-15 minutes or until crisp and golden.
To make Sauce: Blend cornflour and sugar with water in small bowl until smooth. Add to juices in small heavy-based pan, stir over medium heat 5 minutes or until mixture boils and thickens. Remove from heat, cool slightly.
Note: If you prefer frying them, no need to coat with crumbs.
