Dorothy's Real Southern Fried Chicken Country Fried Chicken |

1 chicken (3 to 4 lb.) cut up 3 tsp. salt, divided vegetable oil 1/4 cup butter or margarine 1 cup all purpose flour 1/2 tsp. black pepper

Sprinkle chicken with 2 teaspoons of salt. Place on a platter and cover and refrigerate overnight or at least 4 hours
Pour about 1 inch of the oil into a large, heavy, deep skillet. Add butter and heat over medium-high heat to 375 degrees F.
Rinse chicken under cold water. Place flour, remaining teaspoon of salt and black pepper in a bowl. Coat the chicken pieces and shake off excess.
Add chicken to skillet in a single layer so the pieces do not touch. If necessary, cook in batches.(Keep cooked pieces warm in 200 degree oven)
Cook until evenly golden brown on both sides - turning once after about 15 minutes.
Drain well on paper towels. Serve hot. Enjoy!
