Easy Grilled Citrus Chipotle Chicken

3 half-breasts of chicken (boneless skinless) 1 cup orange juice (preferably fresh-squeezed) 2 oz. canned chipotle peppers in adobo sauce 2 Tbls. cilantro (leaves only from approx. 4-5 stems) 2 Tbls. canola or vegetable oil 1 1/2 tsp. salt 1/4 tsp. pepper Juice of two limes 1 tsp. sriraccha hot pepper sauce (optional for extra heat)

Blend chipotle peppers (in adobo sauce), orange juice, canola oil, cilantro, sriraccha, salt, and pepper in a blender or food processor to create a salsa marinade.
Fillet chicken and marinate in the salsa in the refrigerator for at least four hours.
Remove chicken from refrigerator and add juice of two limes to the marinade. Return to refrigerator to marinate for another 30 minutes to 1 hour (not longer).
Place chicken on a hot grill cooking for approximately 6-10 minutes per side (depending on thickness of fillets.)
Serving suggestions: Serve with black beans and grilled corn, over a salad, in a sandwich, or dice the chicken to make tacos (great with sour cream or mango salsa.)
