Greek Chicken

4 boneless, skinless chicken breasts 3 Tbls. olive oil 1/2 cup white wine 1 can diced tomatoes 1/3 cup fresh chopped parsley or 2 Tbls. dried 2 Tbls. finely chopped black olives 2 Tbls. capers
|
Brown chicken in olive oil for about 3-4 minutes on each side.
Add wine, tomatoes and parsley. Simmer, uncovered, for 20 minutes.
Add olives and capers.
Serve over rice or noodles.
