Hearty Chicken and Rice Simple recipe for chicken and rice |

1 whole chicken (I use 10 skinless chicken thighs) 9 cups rice (cooked) 1 cup of celery (diced) 2 cups of carrots (diced) 1 cup of green onion (diced) 2 Tbsp Lawry's Seasoning Salt 1 Tbsp Onion Powder 1 Tbsp Garlic Powder/Salt 2 Tbsp Pepper

1. Clean chicken and place in a pot of boiling water (just enough to cover chicken/cut chicken up if you like).
2. Add Lawry's Seasoning Salt, Onion Powder, Garlic Powder/Salt and Pepper to the boiling chicken and let boil cook for approx 1.5 hours.
4. Remove bone and gristle from chicken (keep meat in pot u boiled it in).
5. Add two cups of chicken stock and can of cream of chicken to meat and stir.
6. Add diced celery, carrots and green onion to meat mixture and simmer on medium for 10 mins (just long enough to soften the celery and carrots.
7. Spoon rice into serving dish and then add chicken mixture on top of rice and serve.
GOES GREAT WITH HAWAIIAN BREAD!!!
