Madras chicken A sweet & savory curried dish |

2 boneless chicken breasts 2 tbsp Madras curry powder 1 cup orange juice 1/4 cup minced green onion 1/2 tsp ground ginger 1/2 tsp sugar

Before marinating, pierce each chicken breast 10-15 times with a fork, so the holes are evenly spaced. Mix curry, orange juice, onion, sugar, and ginger. Marinate chicken in the mixture, making sure the breasts are fully submerged, for 3-4 hours. Place chicken on center rack of oven, and bake at 350 degrees. Baste chicken with marinade every 4-5 minutes, making sure the surface of the chicken stays moist. After baking for approx. 25 minutes, place chicken under broiler until the suface begins to brown, about 2-3 minutes. Slice each breast thinly, on an angle. Serve over rice or steamed vegetables.
