Mexican Chicken Chicken- Enchilada Style |

4 large chicken breasts 1 large can of tomatoes 1 chicken bouilion cube, disslolved in 1/2 cup water (or 1-1 1/2 tsp. sprinkle bouilion), 1/4 tsp. cumin 1 Tbls. juice from jar of Jalapenos(or more to taste) dash of garlic powder 4 thick slices cheddar cheese.

Bake chicken breasts at 375 degrees F. for approximately 25 minutes or until done.
In a sauce pan, add large can of tomates, bouilion, Jalapeno juice (and/or peppers to taste), cumin and garlic. Heat on med-low.
When chicken is done place slice of cheddar cheese on top of chicken. When cheese is melted just right, remove from oven.
Pour sauce over chicken and serve!
