Mushroom, Onion, Olive Stuffed Chicken

2 boneless chicken breasts 1/4 cup chopped red onion 6 black olives chopped 3-4 mushrooms chopped salt/pepper dash of red pepper flakes 2 Tbls. butter 4 pieces of bacon parmesian cheese
|
Place chicken breasts in large ziplock bag with a little water. Seal bag-pressing all air out. Pound chicken until thin enough to roll.
Combine olives, onion, mushroom, pepper flakes, salt, pepper, and butter in saute pan. Cook at medium heat until onions are soft.
Place bacon under each flattened chicken breast. Sprinkle chicken with salt and pepper, and parmesian cheese.
Place equal amounts of saute mixture on each chicken breast.
Roll chicken and bacon. Place in a pan (bread pan works best) and cook 30-50 minutes in 350 degree F. oven.
