Mushroom-Swiss Cheese Smothered Chicken

8 oz. sliced mushrooms 1 medium onion sliced 4 boneless skinless chicken breasts 2 Tbls. olive oil 1 Tbls. butter 1/4 cup white wine (optional) 1/2 cup chicken broth 4 slices aged swiss cheese salt and pepper

Season chicken with salt and pepper or your favorite grill season blend. Heat olive oil in large skillet on high heat, sear chicken for 1-2 minutes on each side til nicely brown, remove to baking dish.
Lower heat to medium - high, add onions and mushrooms to pan and saute for 3-5 minutes until they get a little color.
Add wine and simmer until reduced.
Add chicken broth and simmer for 1 minute. Stir well to incorporate all the brown bits from the bottom of the pan.
Stir in butter.
Pour sauce over chicken and top each chicken breast with one slice of cheese.
Bake in a 375 degree F. oven for 20-25 minutes until cheese is bubbly.
Serve with mashed potatoes or steamed mashed cauliflower if you prefer low carb.
This recipe is also good for steak, use sirloin or Ribeye, increase oven temp to 400 degrees F. and reduce cooking time for rare.
