One Pan Chicken Delight Chicken breasts, carrots, onions, and potatoes |

4 boneless chicken breasts 1 small sweet onion chopped 2 cups cut up carrots 6 small potatoes cut in quarters 3 tablespoons EV olive oil 2 tablespoons butter 2 cups of chicken broth Flour, salt, pepper, lemon
|
In large skillet with a lid, sauté onions until translucent in melted butter and olive oil over medium heat. Flour chicken breasts, season with salt and pepper. When onions are ready, add chicken to pan and lightly brown on both sides. Add carrots, potatoes, and the juice of one lemon squeezed over the chicken. Add the chicken broth, cover and cook on low heat until chicken and vegetables are tender.
