Peachy Chicken

1/2 cup water
juice from 1/2 lemon
1/2 cup peach preserves
6 chicken breasts, skinned and boned
|
Mix well the peach preserves, lemon juice, and water. Place chicken in a shallow dish and pour ingredients over chicken. Marinate in refrigerator overnight.
Heat oven to 350 degrees F. Drain chicken (saving the marinade) and arrange the chicken in a baking dish. Bake 45 minutes, basting with saved marinade.
Serve over a bed of a rice.
