2 boneless chicken breasts 1 cup white wine (med-dry) 1/2 cup minced yellow onion, devided in half 1 tbsp salt 1 tbsp light olive oil 1 tbsp butter 1 tomato, sliced 2-3 mushrooms, sliced thinly 4-6 slices havarti cheese

Breasts should marinate overnight before cooking. Before marinating, pound breasts, so that the thick end is no more than 3/4 inch thick. Pierce each breast with a fork 10-15 times, so that breast is evenly covered with holes. In a small container mix wine, 1/4 cup onions, olive oil, and salt. Make sure the breasts are fully covered when placed in the marinade, and let soak overnight. When ready to cook, sautee breasts in butter and remaining 1/4 cup onions on med. heat, about 10 minutes, to ensure breast is fully cooked. Allow onions and butter to brown to add extra flavor. When chicken is cooked through, cover with tomato slices. Stack a layer of mushrooms on top of the tomato. Place cheese slices over everything, making sure the whole breast is covered. Place the covered breasts under the broiler for just a few minutes, until cheese is fully melted. Enjoy!
